If you are updating profile picture and don't want it to be on anyone's timeline then go to upload photo and choose one image and click on "Update" and only you can hide. You can see your profile picture is updated after that go to that post click on the "three dot" and change audience so click on "audience" and go to see more. Select only me so now no one can see your profile picture except you.

You have choose the option and your profile picture is private now no one can see. So, in this way you can upload your profile picture without posting.
